Lemon Blueberry Protein Cake

First step, stir together the dry ingredients:

2 scoops of Outcast lemon meringue pie protein powder

1 cup chickpea flour

1 tsp baking soda

1 tsp baking powder

¾ cup oat flour (blended oats)

Then add in:

1 cup plant based milk

1 flavour of berry-flavoured sparkling water

Lemon juice /zest or lemon extract to taste

Mix the dry and wet ingredients together in a large bowl.

Stir a handful of fresh or frozen blueberries into the batter.

Pour the batter into a parchment lined bread loaf pan and bake for 50 mins or until a toothpick comes out clean.
